  • 1 cup sliced carrots
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp. Horizon Organic® unsalted butter
  • 2 (15-ounce) cans small white beans, rinsed and drained
  • 2 (15-ounce) cans chicken or vegetable broth
  • 1 (4-ounce) can or 1/2 cup frozen chopped mild green chiles
  • 1 cup fresh mushrooms, sliced
  • 1/2 tsp. oregano
  • 1/4 tsp. freshly ground pepper, preferably white
  • 2 cups fresh spinach leaves, chopped
  • 3 Tbsp. shredded Parmesan cheese

In large saucepan, sauté carrots, onion and garlic in butter over medium heat about 5 minutes, or until onion is tender. Add beans, chicken or vegetable broth, chiles, sliced mushrooms, oregano and pepper. Bring to a boil, reduce heat and simmer 10 minutes. Add chopped spinach leaves and continue to simmer about 5 more minutes, until spinach is cooked. Ladle into serving bowls and top each with about 1 Tbsp. shredded Parmesan cheese.
