In large saucepan, sauté carrots, onion and garlic in butter over medium heat about 5 minutes, or until onion is tender. Add beans, chicken or vegetable broth, chiles, sliced mushrooms, oregano and pepper. Bring to a boil, reduce heat and simmer 10 minutes. Add chopped spinach leaves and continue to simmer about 5 more minutes, until spinach is cooked. Ladle into serving bowls and top each with about 1 Tbsp. shredded Parmesan cheese.
