Even kids who don't like broccoli will like this cheesy treat.

  • 1/4 cup (1/2 stick) Horizon Organic® unsalted butter
  • 1/2 medium yellow onion, diced
  • 2 cups fresh broccoli florets, chopped very small
  • 1/8 cup all-purpose flour
  • 3 cups chicken broth
  • 1 tsp. Dijon mustard
  • 1 1/2 cups Horizon Organic milk
  • 2 cups Horizon Organic shredded cheddar cheese
  • salt and freshly ground pepper, to taste
  • fresh chopped parsley, to garnish

In a large pot, melt butter over medium heat. Add the onion and sauté about 5 minutes, until soft. Add broccoli and cook 2-3 more minutes. Lower heat, add flour, and cook, stirring, 3-4 minutes, without browning. Add chicken broth and mustard and raise heat to bring to boil. Lower heat and simmer about 5 minutes. Add milk. Bring to simmering point and simmer another 5 minutes. Add shredded cheese, and stir until melted. Salt and pepper to taste. Ladle into serving bowls and garnish with chopped parsley.
