In a stock pot, melt the butter over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently. Reduce heat and simmer for 10 minutes. Mix in cheese, sour cream, salt and pepper. Continue cooking, stirring frequently, until cheese is melted. Tips: Use Horizon Organic 2% or whole milk for best consistency. For lower fat version, use Horizon Organic 2% milk and reduced fat sour cream. If desired, top soup with real or soy bacon crumbles before serving.
