Preheat oven to 350°F. Bring a large (10-12 qt.) stockpot of lightly salted water to a boil, add pasta and cook until al dente. Rinse noodles under cold water and drain thoroughly. Return noodles to stock pot and add shredded cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. Gently combine using hands or spatula. Divide mixture between two lightly greased 10 x 14 baking dishes. Bake for 30 to 35 minutes until mixture bubbles and cheese is melted. Tips: For a crunchy topping, mix together 2 cups dry breadcrumbs and 1/2 cup Horizon Organic butter, melted. Divide and sprinkle over both pans of pasta before baking.
