Combine yogurt, sesame oil, peanut butter, coriander, vegetable oil, soy sauce, chili oil, ginger, garlic, and cilantro in a bowl and whisk to blend. Cook noodles according to package directions, drain, and rinse thoroughly with cold water. Do not overcook noodles; they should be just al dente. Immediately place the cooked noodles, vegetables, and yogurt dressing in a large bowl and mix with your hands until the ingredients are well distributed. Refrigerate. Just before serving, mix in chopped peanuts. Serve chilled or at room temperature. Can be refrigerated up to 24 hours but is best served the same day.
