At Horizon

Thomas Valley Farm.
Joe Doornenbal
didn’t start out with organic in mind. In fact, he had worked for
years in conventional dairies. Then about three years ago, he and
his wife Astrid purchased Thomas Valley Farm. The property was
already more than 50% organic compliant, so converting to 100%
organic made good sense. Today, having experienced first-hand the
superior health of organically-raised cows, Joe wouldn’t dream of
farming any other way. Joe and Astrid share the Scio, Oregon farm
with their children Johan, 13, Reuben, 10, Donata, 9 and David, 7.

The holiday season has arrived.
It’s time to be thankful and join together with family and friends
to celebrate all the good times from this past year. While enjoying
the festivities with your family, try doing so in a way that helps
the environment. Make green your favorite
color for the holidays.
Green Gift Ideas: As you begin to
write your gift list this year, focus on gifts that you can feel
good about. Instead of exhausting your wallet, try using your
imagination and creative spirit. Many of the most memorable gifts
are homemade. Here are a few gift ideas that help you give back:
- Purchase holiday cards made from recycled paper or make your
own from items found around the home.
- Have a friend or family member who doesn’t recycle? Help them
get started by giving them a can crusher, a recycling bin or a
cloth shopping bag to take grocery shopping.
- Give someone something they will never forget, like tickets to
their favorite show or sporting event.
- Create a family recipe book. This is a great way to preserve
your family history and heritage. Include funny stories or
interesting tidbits about family members along with the delicious
recipes.

Chocolate
Butter with Pepper and Port
Recipe

This
simple presentation makes a delightful holiday treat. Use the best
chocolate you can find for this rich, flavorful creation. It’s
heavenly spread on crackers or toast, and makes a lovely gift
presented in a decorative jar.
Yield: 2 cups
Ingredients:
- 8 oz bittersweet, very dark organic chocolate
- 1/4 lb Horizon Organic unsalted butter
- 1/2 cup Horizon Organic heavy cream
- A pinch of freshly ground black pepper
- 1 tbsp port
 |
Using
a serrated knife, finely chop the chocolate into 1/4-inch
pieces. |

Bring
water to a gentle boil in the bottom of a double boiler. In
the top pot, melt the chocolate with the butter and cream,
stirring continuously with a wooden spoon. Add the pinch of
black pepper as the melting is in process. |

Do
not cook any longer than is necessary to emulsify the
ingredients. When the chocolate is nicely combined, remove it
from the heat. |

As
it begins to cool, stir in the port.
The
chocolate butter can be stored refrigerated for a two-week
period, perfect timing for relaxed holiday entertaining. Let
it soften a bit at room temperature, as you would normal
butter, before using.
