At Horizon Organic, we are proud to work with more than 580 family farms across the country. This month we would like to introduce you to the Primus Farm.

Paul Primus took over his Melrose, Minnesota farm from his father 14 years ago. Today, he shares the work with his wife Amy and children Isaiah, 6, Tessa, 3, Dominic, 2, and baby Tia. Although Amy insists that the kids are too young for regular chores, even little Dominic is already skilled at gathering eggs from the chickens and feeding the cows. "It's a great environment for the kids," says Amy. "They love the farm and everything that goes with it -- the space and the fresh air and the wildlife and the sunsets -- it's a wonderful place to grow up."

  • Stuffed Acorn Squash

    Packed with nuts and cheese, these squash make a perfect holiday side dish or meat-free entrée.

    Yield: 4 servings

    Preparation Time: 30 minutes
    Baking Time: 1 hour
    Level of Difficulty: Moderate

    Ingredients:

    • 2 medium acorn squash
    • 3 tablespoons Horizon Organic butter
    • 1/2 cup chopped onion
    • 1 clove garlic, minced
    • 1/4 cup chopped pecans
    • 1 stalk celery, chopped
    • 3/4 cup chopped mushrooms
    • 1 cup cubed whole wheat bread (1/2" cubes)
    • 1/2 teaspoon sage
    • 1/2 teaspoon dried thyme
    • 1/4 cup sunflower seeds
    • 1 tablespoon lemon juice
    • salt and freshly ground pepper
    • 3/4 cup grated Horizon Organic cheddar cheese

    Preheat oven to 350 degrees. Cut squash in half lengthwise and remove seeds and fibers from cavities. Season with salt and pepper and place each half facedown on an oiled baking sheet and bake for 30 minutes until tender. Meanwhile, melt the butter in a skillet over low heat and cook the onion, garlic, pecans, celery and mushrooms until onion is translucent and pecans are toasted, about 10 minutes. Add bread cubes, sage, thyme, sunflower seeds, lemon juice, salt and pepper and cook an additional 6-7 minutes, stirring occasionally. Remove from heat and toss with grated cheese.

    Remove squash from oven, turn right side up and divide stuffing equally between each cavity. Return to the baking sheet stuffing side up, cover with foil and bake an additional 25 minutes.
