Oak Lane Dairy Farm
Keith and Maryann Martin milk more than 100 cows on their Sauk Center, Minnesota
farm. Although the farm is only in its third year of official organic production,
Keith has been grazing his cattle intensively for over a decade. Keith and
Maryann have farmed for nearly 30 years while raising their nine children
-- Carla, 26; Lana, 25; Anson, 23; Kelvin, 20; Lyndon, 18; Wilson, 17; Alan,
15; Toby, 14; and Eddie, 12.

Here`s how it works:
- In 100 words or fewer, moms can share their strategy or tips on how
they converted their family to organic foods and beverages.
- Every month, two entrants with the most creative and impactful strategies
will win prizes and their stories will be posted on the website.
- The grand prize winner will receive a trip for two to New York City
for a personalized organic consultation with Ellie Krieger. Includes airfare,
hotel stay, meals and roundtrip transportation for 3 days and 2 nights.
The grand prize winner will be announced in November 2006.

crunchy
spring pea salad
Serve
this vibrant, tangy-sweet salad in "cups" made from red lettuce leaves.
Yield: 4 (1 cup) servings
Preparation Time: 15 minutes
Refrigeration Time: 1+ hours
Level of Difficulty: Easy-Moderate
Ingredients:
- 1/2 cup Horizon Organic plain yogurt
- 1 teaspoon honey
- 2 teaspoons Dijon mustard
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups shelled fresh peas or frozen tiny peas
- 1 (8-ounce) can sliced water chestnuts, chopped
- 1 red bell pepper, seeded and chopped
- 1 cup chopped celery
- 1/4 cup sliced green onions

In
small bowl, combine yogurt, honey, mustard, dill, salt and pepper. |

Steam
fresh peas for 1-2 minutes until bright green and just tender. If using
frozen peas, place in colander and rinse under hot water for 1 minute
until just thawed. |

In
a large bowl, combine peas, water chestnuts, red pepper, celery and green
onions. Add dressing and toss to coat. Refrigerate for 1-2 hours or overnight
to let flavors develop.
