Netty Loos has spent 30 years on her Scapoose, Oregon farm. She milks 150 cows with the help of her son, Tony and daughter-in-law Sandra. Nettie's grandchildren Kelsie, 15, Athena, 12, Lexine, 10 and Corey, 7 pitch in around the farm as well. Since converting to organic three years ago, Netty's cows have never been happier. "They dearly love being outdoors. In the morning, they all crowd around the gate," says Netty. "Before we switched to organic farming, they generally stayed inside. I never knew they cared!"

Use Horizon Organic whole milk yogurt for a creamier pie. Horizon Organic nonfat yogurt makes this summer treat lighter and zestier.

Preparation Time: 25 minutes
Refrigeration Time: 2+ hours
Level of Difficulty: Moderate

Crust Ingredients:
  • 1/4 cup Horizon Organic butter, melted
  • 1 cup graham cracker crumbs
  • 1 tablespoon sugar
Filling Ingredients:
  • 1 (8 ounce) can crushed pineapple
  • 1 envelope (2 teaspoons) unflavored gelatin
  • 1/2 cup honey
  • 3 cups Horizon Organic plain yogurt (whole milk or fat free)
  • 1 1/2 teaspoons vanilla extract
  • 3/4 teaspoon coconut extract
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened shredded coconut
  • additional toasted coconut and whipped cream for garnish (if desired)

Toast the coconut in a 350-degree oven until lightly browned, about 10 minutes.

To make the crust, combine melted butter, graham cracker crumbs and sugar in the bottom of a 9" pie pan. Press mixture onto the bottom and up the sides of pan.

To prepare the filling, place a colander on top of a saucepan and drain the pineapple through the colander capturing the juice in the saucepan. Sprinkle the gelatin into the juice and let dissolve for five minutes. Bring the juice and gelatin mixture to a boil over medium heat, whisking often. Remove from heat, whisk in honey and set aside.

In the bowl of an electric mixer combine yogurt, vanilla, coconut extract and salt. Beat on medium-high speed about 5 minutes. Add honey/gelatin mixture and beat until well combined. Stir in crushed pineapple and toasted coconut. Pour filling into prepared crust and refrigerate for at least 2 hours until set.

Garnish with more toasted coconut (if desired) and serve.
