Triple Ginger Tea Bread with Creamy Lemon Spread
Triple Ginger Tea Bread

Ingriedients:
- 2 1/2 cups unbleached all-purpose flour
- 1 teaspoon ground ginger
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) Horizon Organic unsalted butter, softened
- 1 cup sugar
- 2 large Horizon Organic eggs
- 1 tablespoon finely grated fresh ginger
- 1 teaspoon finely grated lemon zest
- 1 teaspoon vanilla extract
- 1 cup (8 ounces) Horizon Organic fat-free yogurt
- 1/2 cup crystallized ginger, chopped
Preheat oven to 350 degrees. Butter and flour one 9-inch by 5-inch metal loaf pan.
In a spacious bowl, sift together flour, ginger, baking powder, baking soda, and salt. In the bowl of an electric mixer, beat butter until smooth. Add sugar and beat until creamy.
Reduce speed to low and add eggs, one at a time, beating after each addition until well blended, scraping bowl occasionally. Blend in grated fresh ginger, lemon zest and vanilla extract. Add flour mixture alternately with yogurt, beginning and ending with flour mixture. Mix in crystallized ginger.
The batter will be quite thick at this point. Spoon into prepared pan and smooth top. Bake in the middle of the preheated oven for about 60-65 minutes, until the loaves feel firm and springy when pressed in the center and a tester inserted comes out clean. Cool loaf in pan on wire rack 10 minutes; remove loaf from pan and continue cooling. Serve warm or at room temperature with Creamy Lemon Spread.
Bread will keep well wrapped at room temperature for two days, in the refrigerator for five days, or in the freezer for up to two months.
Creamy Lemon Spread
Yield: 16 1/2 tablespoon servings
Ingriedients:
- 2 1/2 cups unbleached all-purpose flour
- 1 teaspoon ground ginger
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
In the bowl of an electric mixer, cream butter, sugar and lemon zest. Gradually add lemon juice, beating until light and fluffy.
