Place cream cheese and roasted garlic in bowl and whip with electric mixer until cream cheese is creamy and garlic is mixed throughout. Add sun-dried tomatoes and continue to mix until they are evenly dispersed. Serve with bagels, crackers, or vegetables. Makes 1 1/2 cups. To Roast the Garlic: Place fresh garlic cloves, unpeeled, in oven-proof pan and roast at 325°F for 30 minutes or until soft.
