![]() ![]() Inspired by traditional Irish soda bread, this simple loaf is sweetened with currants and vanilla yogurt. It's perfect served fresh from the oven, and also makes excellent toast the next day. Yield: 1 loaf Prep time: 20 minutes

Preheat the oven to 350°F. Grease a baking sheet, or line with parchment paper Whisk the dry ingredients together in a spacious bowl. Add the butter and mix with your hands, using a pinching and tossing motion, until the butter is well distributed through the flour in pea-sized bits, with no oversized lumps remaining. Stir in the currants and the yogurt. Turn the mixture out onto a floured surface and knead for about a minute, until it forms a cohesive dough. Shape into a disk about eight inches in diameter, place on the baking sheet, and bake for 45 to 55 minutes, until crusty and firm when pressed in the center.
